Fire Stuffed Mushrooms

Before arriving in the UK I had never made stuffed mushrooms.

It seems quite a popular dish here so I’ve decided to try make them myself… but being the Italian stubborn girl I am, I decided to add a spicy twist to the recipe.

What you need

Two BIG mushrooms
Rice
Chopped onion
Garlic
Red and green peppers
Grated cheese
Curcuma
Chili powder (a lot)

How to make the Fire Stuffed Mushrooms

In a large pan put some olive oil, the chopped onion, garlic, and half red and green pepper that you have chopped beforehand. Cook on low hit for 3 minutes.

Boil the rice with some curcuma powder wich will give it a nice yellow colour, and when ready, put it in the pan with the peppers. Add a generous amount of chili powder 🙂

Stir it for a couple of minute so that the rice absorbs the flavour of the onion and the garlic.

When the rice is crispy, let it cool then make two big rice balls to fill up the mushrooms.

Cook in the oven for 20 minutes at 180° and eat them while still warm!
