Paprika Chicken and Pesto Rice with Green Beans

Chicken. Who doesn’t have chicken in the fridge? It’s good, simple to cook, doesn’t really require great cooking skills. Boring, really.

But here’s a recipe to make it so tasty you’ll want chicken every day 😉

This recipe is quick and so easy to make you can use it when you don’t have much time to cook.

It’s low-fat and gives you plenty of protein.

What you need:

  • Onion
  • Olive oil
  • Garlic
  • Paprika
  • Chicken breasts
  • Green beans
  • Rice
  • Pesto

First the chicken!

Chop the onion and the garlic and pour it in a baking dish. In goes the chicken. Season it with paprika, salt, a bit of black pepper, and drizzle olive oil all over it.

Cook in the oven for 30 minutes at 200°C, checking that the chicken doesn’t get too dry. It should be perfectly crispy on the outside and soft, jucy when you slice it.

Go for the greens!

While the chicken is cooking, boil the rice. Optimise your time.

Grab another pan and pour the green beans in it with some salted water. Let it boil for 10 minutes, then get rid of the water. Add some olive oil to the green beans and quickly fry for 5 minutes.

When the rice is ready, pour it in a dish, pour some pesto on it and place the green beans on top.

It’s done!

By the time the rice is ready, the chicken should be cooked perfectly. So the only thing left now is grab the biggest piece of chicken you can and place it on your dish.
