Let’s be honest. If you’re reading this you probably love food (like me), but sometimes you don’t really want to cook. Maybe it’s been a long day at work, or you simply want to enjoy your evening without spending hours in the kitchen.
You’ve got four options:
- Order food to be delivered – expensive and not really a healthy choice. Okay for the weekend, but do you really want to start the week with another takeaway meal?
- Get someone else to cook for you – mum/boyfriend/girlfriend, they’re probably busy or tired too…
- Microwave meal? No thank you. Too much salt, fat, and it never tastes like real food.
- Find something that’s easy, healthy and quick to make – but not the usual sandwich!

Here’s a simple recipe that you can make in 15 minutes:
Ricotta ravioli with mushrooms and feta cheese.
What you need:
- Olive oil
- Feta cheese
- Fresh ricotta ravioli
- Fresh basil
First we’re going to prepare the mushrooms, as the ravioli will cook in 3 minutes.
Chop up the garlic and let it fry in the pan with a spoon of olive oil.
Cut the mushrooms in half and pour them in the pan, add a pinch of salt and let them cook for 15 minutes.
If you see that the mushrooms release water, get rid of it by pouring it in the sink and keep cooking the mushrooms.
Grab another pan to boil the ravioli.
When you see the ravioli floating to the surface, they’re ready. Drain the ravioli and pour them in the pan with the mushrooms.
Sprinkle some feta cheese on top and add some basil leaves.
A good stir, and job done! Easy peasy, yeh? Yeh.
Take some to work tomorrow and show your colleagues how easy it is!
