Mushrooms and Cheese Bruschetta

This was a pleasant alternative to what I originally had in mind. Recovery plan gone well πŸ™‚

Here’s what you need for the Healthy Italian Mushrooms and Cheese Bruschetta:

  • Bread
  • Olive oil
  • Garlic
  • Mushrooms
  • Grated cheese (use your favourite, I chose mozzarella)
  • Tomatoes
  • Basil

Get them mushrooms going…

While you prepare the mushrooms, you can toast the bread in a pan for a couple of minutes.

Pour a bit of olive oil and garlic in a pan and let it fry for one minute, then put the chopped mushrooms in and cover with the lid.

Let it cook for 10 minutes. When you see the mushrooms have released too much water, get rid of it and keep cooking the mushrooms for another 5 minutes.

A pinch of salt, one final stir, and you can turn the stove off.

Grab the bread you toasted and pour a generous amount of cheese on it (you can never have too much cheese πŸ˜› ). Place some warm mushrooms on the cheese and let it melt.

Resist the temptation to eat the hot mushrooms/cheese and burn your tongue.

Eat your vegetables!

While the cheese melting process continues, prepare a quick salad by chopping up some cherry tomatoes and some basil. Pour a spoon of olive oil, and there you go, vegetables sorted for today.
